I think Vampire Willow getting it the second time at the end of Doppelgangland was quite poignant because you'd got to know her a bit by then. Still voted for Spike though.!

The vampire who got dusted in the church in the episode "Who Are You" - when Faith/Buffy spun him in the air while dusting him.... Classic! :)

I kind of liked the one in season 6? that kicked her while turning to dust after she says "while you're kicking in the wind'

I quite like the one in "Into The Woods" after Buffy has wrecked the nest of vampires where Riley was getting his kicks. Buffy takes on 8 vamps single handed and looks like she's going to spare the female that was sucking on Riley; the vamp runs off down the alley & Buffy suddenly changes her mind and dusts the female from a distance using her staff like a javelin. Class.

Well, it perhaps doesn't qualify in the "cool" category, but I really liked the scene where Spike dusts his own mother. It tells so much about how different from all other vampires he really is.
