Okay everyone. I am going to attempt to tie up all the loose ends as well as possible.
First, keep in mind that this show always turns out well in the end, so we should asume the best for all unanswered questions.
1) Zuko's Mom: Zuko finding Ursa was storyboarded, but never put in the finale. But because it was storyboarded, she must be alive and Zuko must actually find her.
2) The Nickolodeon official Avatar website says Azula ends up in a mental hospital.
3) Aang may be the last airbender for now, but potentially his children could also be airbenders or he could give bending abilities through energybending (the technique taught by the lion turtle).
4) Toph probably meets up with her family at some point. She no longer has to worry about Xin Fu and Yu... why is no one asking what happens to them?
5) The Nick website says Hawky found a home with Toph's parents.
6) Jet and Combustion man are dead. Accept it.
7) It may not matter if the two dragons from "The Firebending Masters" are male and female - the sun stone may be a dragon egg that has yet to hatch. Otherwise, they better be male and female because dragons will eventually go extinct if their not (though typically dragons can live centuries, so it could be awhile before that happens).
8) The Sky Bison are probably going to be gone after Appa. There is no evidence showing that any others survive. However, sad as that may be (if it is the case) the world should survive without sky bison. It could also survive without dragons and badgermoles potentially.
9) Whatever the future is, expect it to be a happy one.
